I’m not a chef. I love to eat. I also have a family, a husband and two sons. I knew that I didn’t want to be miserable eating grilled chicken and salad, while they had “the good stuff.” Besides, its about eating healthy, yes? I didn’t want them to eat fried and greasy and yucky bad for them food all the time, while I was the only one getting healthy. I had to find healthy meals to cook that they would enjoy, as well. Another sticking point for me was it had to be easy. Ingredients had to be easy to find and relatively easy to cook.
I’m going to share some of the recipes for the foods I mention in my Food Journal. I’m also going to post recipes that I find online that I may want to try. I will give credit to the site I’ve found it on, if its not mine.
Taco Soup - A hearty and healthy soup using ground turkey, beans, tomatoes and peppers
Meatloaf Muffins - It sounds weird, but its meatloaf made in a muffin/cupcake pan. One or two is a perfect portion. No more worrying about if you cut too big a piece. Everyone looks at me funny when they first try it, but usually they love it.
Barbecue Turkey Joes - I love Sloppy Joes. This is a great quick recipe. I usually use it for a Friday or Saturday dinner. Family loves it.
